Calzone-style Hand Pies

Ingredients:

Italian Filling (serves 8)

  • 1 cup sauce
  • 1 pound sausage
  • 8 ounces shredded cheese
  • 1/2 an onion
  • 1 tablespoon garlic
  • 1 tablespoon olive oil

Dough (serves 10)

  • 286 grams flour
  • 7 1/4 grams yeast
  • 28 1/2 grams sugar
  • 5 3/4 grams salt
  • 157 1/4 grams water
  • 25 3/4 grams oil

Directions:

Italian Filling

  1. Dice onion and mince garlic.
  2. Heat oil in sauté pan.
  3. Add onion and cook until translucent.
  4. Add garlic, cook until softened.
  5. Remove to separate bowl.
  6. Add sausage to saute pan and cook until browned.
  7. Add the onion and garlic back into pan with meat.
  8. Stir until well combined.
  9. Place 1 oz sauce, 1oz cheese and 1oz of meat into a crust.

Dough

  1. Mix dry ingredients together
  2. Add wet ingredients and stir to mix
  3. Knead dough for 5 minutes
  4. Let dough rise in a warm place for an hour
  5. Divide dough into 8 parts.
  6. Roll each piece of dough out
  7. Fill dough with ingredients of choice
  8. Fold over and seal the dough.
  9. Place calzones on cookie sheets.
  10. Bake for 30 minutes at 375
