Deliciously Simple Pizza Crust

This pizza crust freezes really well. Make 1 large or 4 mini pizzas. Be creative! Coat the crust with pizza sauce, pesto or even just olive oil. Add healthy toppings like peppers, tomatoes, spinach, and onions. Use moderation when adding cheese and use low-fat cheeses. If you do not have a pizza peel, put the crust on a cookie sheet.

Ingredients:
1 (.25-ounce) package active dry yeast
1 teaspoon white sugar
1 cup warm water (110 degrees)
2½ cups and ½ cup bread flour, divided
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon dried Italian herb blend
½ cup of cornmeal

Directions:
Preheat oven to 450 degrees.
Dissolve yeast and sugar in warm water in a medium bowl. Let sit for about 8 minutes.
Stir in flour, salt and oil. Let rest for about 10 minutes.
Turn dough out onto a floured surface (using remaining ½ cup flour) and shape into a disk shape. Transfer crust to a pizza peel dusted with flour and cornmeal. Roll dough out to desired thickness.
Spread desired toppings over pizza.
Bake in preheated oven for 15 minutes or until pizza is golden brown.
