Ingredients:

  • 8 ounces cooked whole wheat penne noodles
  • 2 eggs or ½ cup egg substitute
  • ¾ cup grated parmesan cheese
  • ½ cup skim milk
  • 20 ounces diced tomatoes with oregano and basil
  • 1 cup shredded low fat mozzarella cheese
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Directions:

  1. Preheat oven to 400 degrees.
  2. Combine the egg substitute, parmesan, milk and seasoning in a large bowl. Stir until well blended.
  3. Add pasta and spread mixture into a 13 by 9 inch glass casserole dish coated with cooking spray.
  4. Add tomato sauce on top of pasta.
  5. Sprinkle with mozzarella cheese.
  6. Cover and bake for 30 minutes or until cheese is bubbly.
