Pecan Crusted Chicken

Ingredients:

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 (4 ounce) skinned chicken breast halves
  • 1 Tablespoon honey
  • 1 Tablespoon Sugar Free pancake syrup
  • 1 Tablespoon dry mustard powder
  • 4 Tablespoons water
  • ¾ teaspoons paprika
  • 1/8 teaspoon garlic powder
  • 2 cups crushed cornflakes
  • ½ cup finely chopped pecans
  • Cooking Spray

Directions:

  1. Preheat oven to 400 degrees.
  2. Sprinkle salt and pepper over chicken, set aside. Combine honey, syrup, mustard, water, garlic powder and paprika in small bowl, stir.
  3. Combine cornflakes and pecans in a dish; stir well. Brush both sides of chicken with honey mixture; dredge in cornflake mixture.
  4. Place chicken pieces on a large baking sheet coated with cooking spray. Lightly coat chicken with cooking spray, and bake for 30 minutes.
