Quick Marinated Shrimp and Pasta

Serving Size: ¼ of shrimp and 1 cup pasta (2 oz dry pasta = 1 cup cooked)

Ingredients:

  • 3 tablespoons minced garlic
  • 2 tablespoons olive oil
  • ¼ cup lemon juice
  • ¼ cup minced fresh parsley
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 ¼ pounds cooked shrimp
  • 8 oz whole wheat pasta, cooked

Directions:

  1. Place garlic and oil in a small skillet and cook over medium heat until fragrant, about 1 minute. Add lemon juice, parsley, salt and pepper. Toss with shrimp in a large bowl. Chill (up to two hours) until ready to serve.
  2. Cook pasta according to directions and serve with shrimp mixture on top.
