Ingredients:

1 pound ground turkey
1 tablespoon olive oil
1 yellow onion, chopped
1 green bell pepper, chopped
3 cloves garlic, chopped
1 cup frozen corn, thawed
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon cayenne pepper
2 tablespoons chili powder
15 ounces crushed tomatoes, no salt added
15 ounces tomato sauce, no salt added
½ cup water
1 can red beans, rinsed and drained
1 can black beans, rinsed and drained

Directions:

  • Preheat a large skillet to medium-high heat. Spray with cooking spray.
  • Add turkey and cook until no longer pink, about 6 minutes. Drain and set aside.
  • In a large, nonstick skillet, add olive oil. Once heated, add onion, pepper, garlic, corn and seasonings. Cook 6 minutes or until vegetables are softened.
  • Add remaining ingredients and cooked turkey and simmer for about 20-25 minutes.
  • Add more water if a thinner consistency is desired.
