Oven Fried Green Tomatoes

  • Canola or olive oil cooking spray
  • Large, sealable plastic bag
  • ½  cup whole-wheat flour
  • ½  cup all-purpose flour
  • 2 tablespoons cornmeal
  • ¼  teaspoon salt
  • ½  teaspoon freshly ground pepper
  • ½  teaspoon onion powder
  • ¼  teaspoon garlic powder
  • 2 pounds green tomatoes (about 3), cut into ½ inch slices
  • 2 large egg whites, lightly beaten


  1. Preheat oven to 475°F. Coat a large baking sheet with cooking spray.
  2. Combine flours, cornmeal, salt, pepper, onion & garlic powder in a large, sealable plastic bag. Dip tomato slices in egg white, then place in the bag to coat with the flour mixture. Arrange the slices, not touching, on the baking sheet. Coat all exposed sides with cooking spray.
  3. Bake on the center rack for 10 minutes. Turn the tomatoes and coat any exposed flour with cooking spray. Continue to bake until golden and just tender, about 8 to 10 minutes more. Serve hot.
