Sautéed Green Beans with Crispy Ham

Include healthy options at your holiday meals! These sauteed green beans include yummy bacon but are still a healthy side dish.

1 pound fresh green beans, ends trimmed
3 teaspoons olive oil, divided
2 ounces ham, reduced sodium, chopped
1⁄2 cup red onion, chopped 3 cloves garlic, minced
1⁄4 teaspoon salt
1⁄2 teaspoon black pepper 1⁄4 cup pine nuts
1 teaspoon lemon zest
1 lemon, juice only


1. Steam green beans in a steamer basket or microwave for 3-4 minutes or until bright green and crisp-tender. Drain and set aside.

2. In a large skillet, heat 1 teaspoon olive oil over medium heat. Add ham and cook until crispy and browned, stirring frequently. Remove ham from skillet and set aside.

3. Wipe out skillet and add remaining 2 teaspoons olive oil over medium-high heat. Add onions and green beans, stirring occasionally. When onions start to become translucent (about 5 minutes), add garlic, salt, pepper, and pine nuts. Cook for an additional 3-4 minutes, or until pine nuts become fragrant and beans start to brown. Add lemon zest and ham in the last minute.

4. Remove from heat and add lemon juice, mixing well.
