Spinach Dip

1 tablespoon olive oil
2 teaspoon all-purpose flour
10 ounces frozen chopped spinach, thawed and squeezed dry
1 cup chopped, jarred artichoke hearts
3 oz. light cream cheese
1 cup shredded low-fat mozzarella cheese
¾ cup skim milk
½ cup onions, chopped
Dash of salt
½ teaspoon black pepper
Onion powder and garlic powder to taste if desired
Baked chips for serving


  • Preheat oven to 375 degrees.
  • Put oil in medium sized saucepan, heat to medium high heat. Add onion and garlic, cook for about 3 minutes, stirring constantly until onions and garlic are tender. Add flour and stir for 30 seconds. Add cream cheese and milk and cook until cream cheese is thoroughly melted and mixture is thickened, season with salt, pepper, onion powder and garlic powder.
  • Place spinach and artichoke hearts in a large bowl, pour the milk mixture over the spinach and stir well. Place in an 8 inch glass baking dish coated with cooking spray. Top with shredded mozzarella cheese.
  • Bake in preheated oven for 15 minutes or until heated through.
