Spinach Quiche

Ingredients:
2 tablespoons light butter
4 cloves garlic, chopped
1 cup yellow onion, chopped
1 (10-ounce) package frozen chopped spinach, thawed and drained
1 cup chopped fresh mushrooms
1 (6-ounce) package low fat herb and
garlic feta, crumbled
1 (8-ounce) package low fat shredded Cheddar cheese
salt and pepper to taste
1 (9-inch) unbaked deep dish pie crust or
36 mini crusts
1 egg, beaten
4 egg whites, beaten
1 cup skim milk
1 teaspoon onion powder
1 teaspoon garlic powder
salt and pepper to taste

Directions:
1. Preheat oven to 375 degrees.
2. In a medium skillet, melt butter over medium heat. Sauté garlic, mushrooms and onion in butter until lightly browned, about 7 minutes.
3. Stir in spinach, feta and ½ cup Cheddar cheese.
4. Spoon mixture into pie crust.
5. In a medium bowl, whisk together eggs and milk. Season with onion powder, garlic powder, salt and pepper. Pour into the pastry shell.
6. Sprinkle top with remaining Cheddar cheese, and bake for 45 minutes, until set in center. Allow to stand 10 minutes before serving.
