Tex-Mex Breakfast Burrito

  • 6 slices turkey bacon, cooked and crumbled
  • 5 eggs, lightly beaten
  • ½ cup shredded cheddar cheese, low fat
  • ¼ cup chopped green onions
  • ½ cup canned black beans, rinsed and drained
  • ½ cup black bean and corn salsa
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 6 high fiber, 80 calorie tortillas


  1. Heat a large nonstick skillet to medium heat. Spray pan with nonstick cooking spray.
  2. Place all eggs in skillet and cook until the eggs are completely set, stirring occasionally, about 3 minutes. Season eggs with pepper, onion powder and garlic powder.
  3. Spoon 1/4 cup egg mixture down center of each tortilla; sprinkle each tortilla with cheese, onions, bacon, black beans and salsa. Fold tortilla and serve.
