Whole Wheat Ginger Bread Loaf

Baking is a great way to celebrate the holidays with children. This healthy recipe uses fun ingredients and provides plenty of opportunities for measuring, stirring and discussing healthy food. The welcoming smell of gingerbread will warm the soul and the taste will please little ones’ tummies. Pair a slice of this loaf with warm apple cider or wash it down with a cold glass of milk.

  • 1½ cups whole wheat flour
  • ¼ cup dark brown sugar
  • ¾ teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/8 teaspoon cloves, ground
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 egg whites, beaten
  • ½ cup plus 2 tablespoons low fat buttermilk
  • ½ cup plus 2 tablespoons applesauce, no sugar added
  • ½ cup molasses


  1. Preheat oven to 350 degrees.
  2. Spray an 8×8-inch baking pan with cooking spray, set aside.
  3. In a large bowl stir flour though baking soda.
  4. In a small bowl, combine remaining ingredients. Add buttermilk mixture to flour mixture, stir well.
  5. Pour batter into prepared pan.
  6. Bake for 30 minutes or until cake springs back when touched.
